  • 500 g butternut squash
  • 4 cloves garlic
  • 1 yellow onion
  • 500 g shelf-stable gnocchi
  • 50 g turkey slices
  • 75 ml milk
  • 1 ball of fresh mozzarella
  • 3 sprigs rosemary
  • 2 tbsp olive oil
  • 50 g parmesan
  • Juice of 1 lemon
  • 30 g walnuts

Instructions

  1. Preheat your oven to 180ºC.
  2. Toss butternut squash cubes, sliced onion, and garlic on a baking tray with rosemary and olive oil. Roast for about 30 minutes until tender.
  3. Blend the roasted vegetables into a smooth purée, adding water as needed.
  4. In a pan, cook turkey strips in olive oil until crispy; set aside.
  5. In the same pan, combine the purée with milk and gnocchi; simmer for 8-10 minutes until gnocchi is tender.
  6. Stir in parmesan cheese and lemon juice, then fold in half of the turkey strips.
  7. Top with mozzarella pieces and broil until golden brown.
  8. Serve garnished with remaining turkey strips and walnuts.
