  • 8 skinless, boneless chicken thighs
  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce

Instructions

  1. In a bowl, toss the chicken thighs with cornflour, salt, and pepper until coated.
  2. Heat vegetable oil in a large frying pan over high heat. Add the chicken and cook for 4-5 minutes on one side until golden brown; flip and cook for another 2 minutes.
  3. Lower the heat, add butter to the pan, then stir in minced garlic until fragrant.
  4. In a separate bowl, mix honey, chicken stock, rice vinegar, and soy sauce. Pour into the pan with chicken and bring to a boil. Simmer for about 4-5 minutes until thickened.
  5. Serve over boiled rice, garnishing with chopped parsley and chili flakes.
