8 skinless, boneless chicken thighs
2 tbsp cornflour (cornstarch)
1/2 tsp salt
1/2 tsp pepper
2 tbsp vegetable oil
1 tbsp unsalted butter
4 cloves minced garlic
110 g (1/3 cup) honey
80 ml (1/3 cup) chicken stock
1 tbsp rice vinegar
1 tbsp light soy sauce
Instructions
In a bowl, toss the chicken thighs with cornflour, salt, and pepper until coated.
Heat vegetable oil in a large frying pan over high heat. Add the chicken and cook for 4-5 minutes on one side until golden brown; flip and cook for another 2 minutes.
Lower the heat, add butter to the pan, then stir in minced garlic until fragrant.
In a separate bowl, mix honey, chicken stock, rice vinegar, and soy sauce. Pour into the pan with chicken and bring to a boil. Simmer for about 4-5 minutes until thickened.
Serve over boiled rice, garnishing with chopped parsley and chili flakes.
