  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed and rinsed)
  • 6 cups low-sodium vegetable stock
  • 1/3 cup apple vinegar
  • 1 tbsp smoked paprika
  • Sea salt and black pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottom Dutch oven over medium-low heat until the onion is translucent.
  2. Add minced garlic, then stir in rinsed jackfruit pieces, thyme sprigs, bay leaves, and apple vinegar. Simmer until most vinegar evaporates.
  3. Whisk whole wheat pastry flour into vegetable stock until smooth, then pour into the pot with jackfruit. Stir in smoked paprika and bring to a simmer.
  4. Cook for about 45 minutes until jackfruit is fork-tender.
  5. Stir in gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the top.
  6. Discard thyme sprigs and bay leaves; garnish with freshly chopped parsley before serving.
