- 16 ounces firm tofu
- 2 tablespoons olive oil
- 3 cloves garlic (grated)
- 1½ inches ginger (grated)
- ¾ cup dried mushrooms (shiitake recommended)
- 8 ounces fresh mushrooms (chopped)
- 6 cups vegetable broth
- 1 cup broccoli florets (or other veggies)
- Optional: 1 heaping tablespoon miso paste, noodles, garnishes
- Soak the dried mushrooms in hot water for about 5 minutes. Heat olive oil in a large pot and sauté garlic, ginger, and chili until fragrant.
- Add soaked mushrooms and fresh mushrooms to the pot along with soy sauce, salt, and pepper. Cook for about 5 minutes.
- Pour in vegetable broth and bring to a boil. Add diced tofu, broccoli, and peas; simmer for 10-15 minutes until veggies are tender.
- Adjust seasoning if needed. For added flavor, dissolve miso into some hot broth before stirring it back into the soup.
- Serve garnished with scallions, cilantro, and sesame oil.
