Ingredients

  • 16 ounces firm tofu
  • 2 tablespoons olive oil
  • 3 cloves garlic (grated)
  • inches ginger (grated)
  • ¾ cup dried mushrooms (shiitake recommended)
  • 8 ounces fresh mushrooms (chopped)
  • 6 cups vegetable broth
  • 1 cup broccoli florets (or other veggies)
  • Optional: 1 heaping tablespoon miso paste, noodles, garnishes

Instructions

  1. Soak the dried mushrooms in hot water for about 5 minutes. Heat olive oil in a large pot and sauté garlic, ginger, and chili until fragrant.
  2. Add soaked mushrooms and fresh mushrooms to the pot along with soy sauce, salt, and pepper. Cook for about 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Add diced tofu, broccoli, and peas; simmer for 10-15 minutes until veggies are tender.
  4. Adjust seasoning if needed. For added flavor, dissolve miso into some hot broth before stirring it back into the soup.
  5. Serve garnished with scallions, cilantro, and sesame oil.
