  • 300 grams broccoli (cut into small florets)
  • 200 grams halloumi (cubed)
  • 1 fennel (sliced thinly)
  • 2 tablespoons olives (sliced into rings)
  • 2 tablespoons roasted red peppers (cut into strips)
  • 2 spring onions (sliced into rings)
  • 3 tablespoons pesto
  • 1 tablespoon olive oil
  • 2 tablespoons toasted pine nuts
  • Fresh basil for garnish

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Steam or blanch the broccoli until bright green and tender-crisp.
  3. In a skillet, heat olive oil over medium heat. Sauté cubed halloumi until golden brown on all sides.
  4. In a large bowl, combine cooked pasta, broccoli, fennel, olives, roasted red peppers, and sautéed halloumi. Drizzle with pesto and toss gently.
