  • 1 tsp vanilla extract
  • 1/2 cup brown sugar for the filling
  • Additional cinnamon to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare muffin tins with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, mix whole milk (or almond/oat milk), eggs, melted butter, and vanilla extract.
  4. Fold wet ingredients into dry until just combined; some lumps are okay.
  5. Make the filling by mixing brown sugar and extra cinnamon together in a small bowl.
  6. Fill muffin cups halfway with batter, sprinkle with filling mixture, then top with remaining batter.
  7. Bake for 18-20 minutes until golden brown and springy to touch.
