  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon melted butter for the swirl
  • 2 tablespoons ground cinnamon
  • ½ cup light brown sugar for the swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix melted butter, granulated sugar, and brown sugar until smooth. Beat in eggs one at a time and add vanilla extract.
  3. Stir in flour, baking powder, and salt until just combined.
  4. In a small bowl, mix melted butter with cinnamon and brown sugar for the swirl.
  5. Spread half of the batter into the prepared pan. Drop half of the cinnamon mixture on top and gently swirl with a knife. Repeat with remaining batter and swirl.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
  7. Cool for at least 10 minutes before slicing.
