  • 200g all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 ½ tsp ground cardamom
  • 150g unsalted butter, softened
  • 200g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120ml whole milk
  • ¼ cup sour cream (optional)
  • Pearl sugar for topping (optional)

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare your cake pan by greasing and lining it with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, salt, and ground cardamom.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition; then stir in vanilla extract.
  5. Gradually add the dry mixture to the butter mixture, alternating with milk until just combined. Fold in sour cream if using.
  6. Pour the batter into the prepared pan and sprinkle pearl sugar on top if desired.
  7. Bake for 30–35 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
